Summer Pavilion

The new Summer Pavilion embodies the spirit and celebration of the summer season. Surrounded by a modern Chinese garden and a glass pavilion, Summer Pavilion offers an intimate and sophisticated Cantonese dining experience.

An opulent celebration of summer filled with objets d’art and selective furnishings that emulate memories of the finest summer celebrations set amongst a purity of design, diners can feel the warmth of the timber and admire the sparkling of the white lacquer in the new Summer Pavilion.

The restaurant features a new entrance access, reminiscent of a modern Chinese garden. The garden entrance sets the stage for a summertime experience while paying tribute to the modern renowned architectural style of The Ritz-Carlton, Millenia Singapore, which was designed by Kevin Roche.

tonychi design studio is responsible for the new vision of Summer Pavilion. Tuxedo-inspired uniforms designed by Mineo San of Art Marginal formalise the dining experience and reflect the service philosophy of the restaurant, while Robert Louey Design fashions the experience of “dining in a garden", through the use of floral motifs in the restaurant’s collaterals. An acoustical arrangement of soothing Chinese flute and piano tunes from Morton Wilson of Schtung Music enhances the overall dining experience.

Executive Chinese Chef Cheung Siu Kong promises to excite palates with his repertoire of exquisite, contemporary Cantonese cuisine. New highlights on the menu include the double-boiled sea whelk soup with fish maw and chicken served in a whole coconut; braised four-head South African abalone; poached rice with lobster; and braised estuary grouper with dried beancurd skin. Summer Pavilion offers lunch and dinner daily, including dim sum, à la carte and set menus.

At the main dining hall, private booth seats are available for intimate gatherings and business discussions. The brand new space has a seating capacity of 200 persons and encompasses six private dining rooms with names inspired by Chinese plants and trees – Pine, Elm, Wisteria, Plum and Bamboo. Each private dining room features a barmoire equipped with wines, liquors and spirits. The Garden Suite, which can seat a private party of up to 30 persons, is perfect for hosting extended family reunions or company events. This Chinese restaurant private dining room boasts a separate entrance, a “living room" which can function as a pre-event area, with three built-in LCD projectors and screens available to cater for various functions.

The new Tea Salon situated within the restaurant allows diners to choose from a selection of specialty teas including unique tea blends such as lychee oolong and momo-in-black (black tea with Chinese white peach) from Tea Bone Zen Mind to pair with their meal.
